I actually got them done and properly adjusted. I'm very proud of myself in that I learned on one wheel how to do it, making the second one a very quick job. Cheers.

Hahaha, yeah I found myself talking about goats' asses while working on those rear brakes more than usual Actually, it was not as bad as I expected it to be. Now, the adjustment was a different story. That was borderline Freddy Crouger nightmare type of stuff, but once I got the wedge to where I needed it to be my brakes feel civilized now. It's a great little car this Jetta, during the summer when my Jaguar is on the prowl and the Jetta hybernating I'm thinking of dropping a 2.0 liter 16 valve engine with a 5-speed transmission into it to bring some life to it. The 1.8 with the 3-speed automatic transmission are just dreadful.
