P2181 Code repair question

I've been told the P2181 code refers to either a cooling system or thermostat replace. I've had the cooling system replace, which after looking at the mechanic replace it, it was a very easy replacement. Since this replacement didn't clear the code, the next attempt is to replace the thermostat.

My question is; is this a replacement that I ( non-mechanic) can do myself of should I let a mechanic replace it?

The P2181 code refers to a cooling system performance issue, most times it could be the thermostat causing the code or possibly the coolant temperature sensor. Does the vehicle get up to temp pretty quickly?

also what motor is this for the 2.5 or 2.0?

The temp gauge takes about 5 minutes to react when the car is first started. Then stays around the halfway mark while driving.

It's a 2007 Volkswagen Jetta 2.0.

A mechanic I went to said he'd have to remove the manifold in order to replace the thermostat, which is "labor intensive".
